9-Grain Bread

40 QT Mixer, Hook

Ingredients                                Lbs      Oz

9-Grain Ceral Flour                                        4

Hot Water                                                         4

Mix together and let set to cool.

Cold Water                                                       3 (variable)

Whole Eggs                                                     1 liquid eggs (or 8 lg shells)

Vegetable Oil                                                                     6

Honey                                                                                  6

Yeast                                                                                    7

Bread Flour                                                     8  (If desired, substitute 2 lb whole wheat.)

Oats (quick or rolled)                                                        8

Granulated Sugar                                                             12

Salt                                                                                      3

Mix all liquids and yeast together to incorporate. Add 9-grain and all other ingredients and mix in 2nd speed for 4-5 minutes then 3rd speed until dough pulls away from sides of bowl.
Take dough to bench scale and round. Let rest for 15-20 minutes. Next form for bread or rolls. Proof 30-45 minutes. Dough will double in size when ready.
Bake at 350°     Bread 20-25 minutes. Rolls 15-18 minutes.
