New York Cheese Cake (ver. 2)

Cream Cheese (Room temp)                        15lb.

Granulated Sugar                                           3½ lb.

Mix together; do not cream

Shell Eggs                                                        2¾ qt.

Add eggs in 10-12 parts and scrape down often as not to have lumps

Cream                                                               8 oz.

Add cream slowly.

Use Spring Form Pans for Baking Cheese Cake


Weights for Cheese Cake

10”                          4-5 lbs.

9”                            3-4 lbs.

8”                           2-2½ lbs.

Bake in oven water bath at 300 degrees for 1 hour and 20 min to 1 hour and 45 min.

Use 20 qt. paddle.
