Ganache

ganache-tart_sm1Heavy Cream                                          1 pt.

Chocolate                                                 1½ lb.

Bring cream to a boil, as it rises add chocolate and remove from heat. Incorporate chocolate. DO NOT over mix as this will add air bubbles to your ganache.

Double the chocolate to 3 lb. for white ganache.
