Pie Dough (Ver. 2)

Pastry Flour                                                      5 lb.pie-crust

All-purpose Shortening                                  2 lb.          8 oz.

Powder Sugar                                                  1 lb.          4 oz.

Salt                                                                                       1 oz.

Whole Eggs                                                      1 lb.          10 oz.

Mix sugar, salt, shortening and half the flour for one minute in 1st gear then one minute in 2nd gear. Add eggs and scrape down then mix for one minute in 1st gear then one minute in 2nd gear. Add the rest of the flour and incorporate. DO NOT over mix.

Use 20 qt. mixer paddle.
